This Cucumber Avocado Soup is absolutely refreshing and filling! It's full of cucumber for healthy hydration, avocado for satisfying fats, and mint and scallions for that extra bit of flavor. Plus, it's so easy to make and doesn't require hours over the stove – a win-win for hot days when you just want something chilled.
You start by peeling a cucumber. Then cut it length-wise and scrape out the seeds with a spoon. It helps if the cucumber is seedless! After, you blend all your ingredients together. If you want to serve your soup chilled, pop it in the fridge for a few hours. If you aren't in the mood to wait around, just go ahead and eat your room temperature soup. Feel free to garnish it with whatever herbs you have on hand!
