Are you hosting a Halloween party this year? If so, make sure to include this delicious side dish that packs a major flavor punch.
Not only does this dish look perfectly creepy and spooky for Halloween, but it also tastes so good and is incredibly easy to make.
Just roast the cauliflower in the oven, whip up the sauces, and you have yourself a crowd-pleasing veggie side.
Oh and stab a knife in it for good measure! Not only will you need this for serving, but it also gives a dramatic Halloween flare.
Roasting Cauliflower
Roasted Cauliflower could not be more simple to make since all you need to do is add oil and seasoning then throw it in the oven.
It makes a great keto dinner side that is extremely customizable.
Roast a whole head (like this recipe does) or chop the cauliflower into florets and then roast. Either way - it is delicious!
Since cauliflower has such a mild taste, you can mix and match your favorite seasonings and create different flavor profiles each time!
In this recipe we are using curry, chili, and garlic to season the keto cauliflower. And it tastes fabulous!

Is Cauliflower Keto?
Absolutely yes! Coming in at just 2 net carbs for one cup of raw cauliflower (Total Carbs of 5 grams less 3 grams of Fiber).
It's also high in vitamin K and vitamin C – in fact, it has more Vitamin C than an orange!
We also love the fiber content and anti-inflammatory properties. And it is rich in choline, allicin, and other antioxidants too.
How to Store Cauliflower
Cauliflower can get moldy very quickly without proper storage.
We recommend removing the cauliflower head from the cellphane wrap and transferring it to a large Ziploc bag.
In order to absorb any excess moisture, line the bag with a paper towel and then poke a few holes in the bag so the cauliflower can breath.
Store the cauliflower in your refrigerator (ideally your crisper drawer) for up to 7 days.
What Ingredients You Need
Aside from the obvious (a cauliflower head), the only other ingredients needed are for the 3 separate sauces that go onto the cauliflower brain.
Each sauce has its own distinct flavor and the combination of all 3 provide such a deep flavor profile. It tastes AMAZING!
And the good news is that you probably have most of these ingredients in your kitchen already.
If you don't have red curry paste or Thai chili garlic sauce, these are available on Amazon or in the International aisle of your local grocery store.
Curry Sauce
- Avocado oil
- Red curry paste (you can find this in the International aisle of your local grocery store)
- Chili powder
Chili Cream Sauce
- Garlic powder
- Sour cream
- Mayonnaise (make sure it is keto-friendly)
- Thai chili garlic sauce (you can find this in the International aisle of your local grocery store)
- Apple cider vinegar
- Granular erythritol or monk fruit sweetener

Time To Get Cooking
Let's break down the process of how to achieve this perfect Keto Halloween Cauliflower Brain.
It only takes a few easy steps and the result is pure spooky deliciousness!
Step #1. Prepare The Cauliflower
Take your cauliflower out of the fridge and remove any of the green leaves at the bottom of the cauliflower.
Then using a sharp knife, cut the cauliflower down the middle BUT DON'T CUT IT ALL THE WAY THROUGH!
You just want to slice it vertically down the center about 1-2 inches to create a separation between the two hemispheres (as pictured below).
The cauliflower base should still be intact.
PRO TIP: When you are at the grocery store look for the most symmetrical cauliflower head than you can find.
Step #2. Prepare the Curry Sauce
In a small bowl, mix together the avocado oil, red curry paste, chili powder, and garlic powder.
The sauce will be red in color and smell very fragrant.
Brush the mixture all over the top and sides of the cauliflower.
Step #3. Roast the Cauliflower
Once the cauliflower head is fully coated with the curry sauce, you are ready to roast.
Transfer the cauliflower to a baking sheet lined with parchment paper (it makes for easy clean up) and bake for 20 minutes at 400°F.
Step #4. Prepare the Chili Cream Sauce
While the cauliflower is baking, mix together the sour cream, mayonnaise, Thai chili garlic sauce, apple cider vinegar, and keto sweetener in a small bowl.
After the cauliflower has roasted for 20 minutes, remove it from the oven and spread on the this mixture.
Put back in the over bake again for 10 more minutes or until the edges begin to blacken slightly.
Step #5. Prepare the Sweet Chili Mayo
In another small bowl, mix together the mayonnaise, Thai chili garlic sauce, and keto sweetener.
Transfer the mixture to a small plastic sandwich bag and snip off one of the corners so that the mixture can be drizzled onto the brain.
Drizzle the mixture all over the roasted cauliflower, followed by a drizzle of Sriracha.
Garnish the cauliflower with some cilantro, crushed pork rinds and chopped scallions for the final touches.
For a dramatic and scary effect, serve your cauliflower on a cake stand with a steak knife stabbing into the top of the brain. Then cut it into slices in front of your guests.

Halloween Keto Cauliflower
Ingredients
- 1 head cauliflower green leaves removed
- 1/4 cup avocado oil
- 2 tablespoons red curry paste
- 2 teaspoons dark red chili powder
- 1 teaspoon garlic powder
- 2 tablespoons sour cream
- 6 tablespoons mayonnaise divided
- 4 teaspoons Thai chili garlic sauce divided
- 2 teaspoons apple cider vinegar
- 3 teaspoons keto sweetener divided (you can use granular erythritol or monk fruit sweetener)
- 1 tablespoons Sriracha
- 1 tablespoon fresh cilantro chopped
- 1/4 cup crushed pork rinds
- 1 scallion chopped
Instructions
- Heat your oven to 400°F and line a baking sheet with parchment paper.
- Take your cauliflower out of the fridge and remove any of the green leaves at the bottom of the cauliflower.
- Using a sharp knife, cut the cauliflower down the middle BUT DON'T CUT IT ALL THE WAY THROUGH! The cauliflower base should still be intact.
- Brush the curry mixture all over the top and sides of the cauliflower.
- Transfer the cauliflower to the lined baking sheet and bake for 20 minutes.
- While the cauliflower is roasting, mix together the sour cream, 2 tablespoons mayonnaise, 3 teaspoons Thai chili garlic sauce, the apple cider vinegar, and 2 teaspoons keto sweetener in a small bowl.
- After the cauliflower has baked for 20 minutes, remove it from the oven and spread on the sour cream mixture. Bake again for 10 more minutes.
- While the cauliflower is roasting, mix together the remaining 1/4 cup mayonnaise, remaining 1 teaspoon Thai chili garlic sauce, and remaining 1 teaspoon keto sweetener in another smaller bowl.
- Transfer this mixture to a small plastic sandwich bag and snip off one of the corners so that the mixture can be slowly piped onto the roasted cauliflower.
- Remove the cauliflower from the oven and drizzle the mayonnaise mixture onto the cauliflower brain, followed by a drizzle of Sriracha.
- Garnish with cilantro, crushed pork rinds, and chopped scallions.
- Serve on a cake stand with a knife inserted through the top for dramatic effect.
