This calzone is our keto take on the traditional carb-filled calzone you would get at your local pizza shop. It tastes just as good and is super easy to make!

Ingredients
This recipe utilizes a classic Fat Head Crust. Fat Head Crust couldn't be easier to make and tastes incredible whether it is savory or sweet!
Here are the ingredients for the crust:
- Mozzarella: We like to use shredded mozzarella as it melts more easily with the cream cheese.
- Cream cheese: Use full fat.
- Egg: To help bind the ingredients together and get the dough golden brown when it is baked.
- Almond flour: A great low-carb and gluten-free alternative to all purpose flour.
- Baking powder: To help the dough rise.
As for the filling, we are using the following ingredients, but you can stuff your calzone with your favorites:
- Ricotta: A wonderfully creamy soft cheese.
- Mozzarella: For those wonderful cheese strings!
- Italian sausage: Cook the sausage before adding it to the dough.
- Seasonings: Dried oregano and salt.

How to Make a Keto Calzone
The full instructions are detailed in the recipe card at the end of this post.
But we wanted to give you step-by-step instructions, so you know exactly how to make this low-carb calzone.
Step #1. Gather Your Ingredients
First, gather your ingredients for both the crust and filling.
Measure them out ahead of time.
Step #2. Melt the Cheeses
Next, melt the mozzarella and cream cheese in the microwave for a total of 90 seconds, working in 30-second intervals.
Stir between each interval until it is fully melted and there are no visible shreds like the picture below.
Step #3. Add the Other Crust Ingredients
To the same bowl with the melted cheese, add the egg, almond flour, and baking powder.
Knead with your hands until all the ingredients are incorporated, then create a large dough ball.
Step #4. Roll Out the Dough
Divide the dough ball into 3 equal parts.
Roll out each of the 3 dough parts into 8-inch circles in between two layers of parchment as pictured below.
Remove the top layer of parchment paper and carefully transfer the bottom layer of parchment paper with the dough circles onto a baking sheet.
Step #5. Assemble the Calzones
Time to assemble the calzones!
- Mix your fillings (cheeses & sausage) together in medium bowl.
- Put 1/3 of the filling on one half of each dough circle.
- Fold the other half of the dough over and seal the edges with a fork.
- Beat an egg with a fork lightly and brush the egg over the top of each calzone.
- Using a knife, make 3-4 slits in the top of each calzone about an inch apart.
- Sprinkle the calzones with dried oregano and coarse salt.
It should look like the picture below.
Step #6. Bake Your Calzone
Bake at 375°F for 20-26 minutes or until the tops are golden brown.
Take it out of the oven, let cool slightly, and enjoy!

- Don't over-stuff. Be careful not to pack your calzone to the brim.
- Pre-cook your vegetables. If you are stuffing your calzone with veggies, sauté them in a skillet until they are softened slightly.
- Avoid hidden sugars. If using pizza sauce, make sure it is sugar-free and don't add too much or the crust will get too soggy. We like to keep our sauce on the side and then dip the calzone into it!

Ingredients
For the Calzone Crust
- 1 1/2 cups shredded mozzarella
- 2 ounces cream cheese
- 1 egg
- 3/4 cup almond flour
- 1/2 teaspoon baking powder
For the Filling
- 1/2 cup ricotta
- 1 cup shredded mozzarella
- 1 cup Italian sausage cooked and crumbled
For the Topping
- 1 egg
- 1 teaspoon dried oregano
- 1 teaspoon coarse salt
Instructions
- Heat your oven to 375°F.
- Add 1 1/2 cups shredded mozzarella and 2 ounces cream cheese to a microwave-safe bowl.
- Melt the cheeses in the microwave for a total of 90 seconds in 30-second intervals, stirring between each interval.
- To the same bowl, add 1 egg, the almond flour, and the baking powder.

Tries this recipe, but it ended up as a sticky mess! Any pointers? It just seems like mozzarella base for the crust is going to end up extremely sticky. Tried balancing it out by adding more almond flour.... but it still ended up being very frustrating.

I was skeptical, this is my first attempt at fathead dough and a keto calzone. It came out AMAZING. I think I needed to add more almond flour as it was soft and when I rolled it out, it broke apart. I ended up having 1 giant thicker calzone but it worked out great. Very rich. I stuffed it with mushrooms/red peppers/spinach/onions with a tomato/balsamic sauce/reduction and put ricotta in it. You don't really need cheese on the inside with the rich flavor of the dough. I'm glad I came across this and will definitely make it again. Oh I also baked it at 425 and it took 17 minutes, nicely browned crust. Couldn't have been happier. Thanks for the recipe. Can't wait to try more of them!
