Not only are they super simple to make - no need for any special equipment like a electric mixer, they are also almost impossible to mess up!
The mix all the ingredients together in a bowl and back. No need to worry about cracks or imperfections! In fact, a crisp crackly top is the sign of a good brownie!

Making These Keto Chocolate Brownies Festive
We have upgraded our brownies with a super fudgy center of melted chocolate chips.
Then we have topped them with two layers of chocolate and some crushed sugar-free peppermint candies.

What Chocolate Should I Use
Luckily with the gaining popularity of the keto diet, low-carb chocolate brands do exist!
Some of our favorites are:
- Lily's Brand – Is sweetened with stevia and erythritol and doesn't contain any added sugars or artificial sweeteners. There can sometimes be a bad aftertaste with stevia, but you can't taste it at all with this brand.
- Choczero – Is sweetened with monk fruit and doesn't contain any added sugars, sugar alcohols, or artificial sweeteners. This is a great option if you don't tolerate stevia or erythritol well.
- Macalat – Is sweetened with a combination of erythritol and monk fruit. It is made from all organic ingredients and also includes a touch or vanilla and cinnamon.
Be careful with the types of chocolate you buy and always look at the labels for the ingredients and added sugar amount.
For this recipe we used Lily's Chocolate Baking Chips and Chocolate Chips.
Let's Get Baking
These keto chocolate brownies come together in 4 simple steps.
We are going to review each one, so you know exactly what to.
Let's go over the step-by-step instructions.
Step 1: Make the Keto Chocolate Brownie Layers
First, melt your keto-friendly chocolate and grass-fed butter together in the microwave. Then add in the granular erythritol, eggs, and vanilla.
Next, stir in some almond flour and a pinch of salt.
Gently, fold in the keto-friendly chocolate chips.
Pour the brownie batter into a parchment lined 8"x 11" baking dish.
Bake at 350°F for about 25 minutes or until the center is set.
Then let cool for 15 minutes, while you work on your other chocolate layers.
Step 2: Make the Peppermint White Chocolate Layer
To make the white chocolate and give it the white color, we are using pure cacao butter. Cacao butter is the pressed oil of ground cacao beans. It makes the perfect base for chocolate and is full of healthy fats. Healthy fat are a necessity on a keto diet
Below is a picture of what cacao butter looks like. We get ours on Amazon, but you can find it in most grocery stores nowadays.
In a microwave safe bowl, melt the cacao butter in the microwave for 30 second intervals until melted, stirring between each interval.
Whisk in the confectioner erythritol. Then stir in the peppermint extract, vanilla extract, salt, and heavy cream.
Pour the white chocolate mixture over cooled brownie layer.
Step 3: Make the Chocolate Ganache Layer
For this layer, melt the keto-friendly chocolate in the microwave at 30 second intervals until it is full melted.
Stir in some heavy cream until fully combined.
The chocolate ganache should be very thick after your whisk in the heavy cream.
Use a spoon to dollop the ganache over the White Chocolate Peppermint Layer.
Next, use a toothpick, chopstick, or wooden bamboo skewer to create swirls in the chocolate.
Be careful not to over-swirl the chocolate layers. We want nice defined swirls (like the picture below).
Step 4: Sprinkle the Crushed Peppermint Candies Over Top
For this step, you can use sugar-free candy canes or the circular peppermints. We like Doctor John's Peppermint Candies. They are sugar-free, sweetened with erythritol, and use vegetable juice for coloring instead of artificial dyes.
Crush the peppermint candies by unwrapping them and placing them in a sealed plastic sandwich bag.
Lightly hit them with a hammer or heavy object (like a heavy skillet).
Sprinkle the crushed candies over the chocolate layers while they are still in liquid form.
Your finished product should look like the picture below.
Let the chocolate layers harden before serving.
Final Touches
After the chocolate has hardened, cut the brownies into 16 rectangles.
They will be very dense and thick!! One brownie will definitely fill you up!
Store any leftovers in a sealed container at room temperature.

Keto Chocolate Brownies with White Chocolate and Peppermint
Ingredients
For the Brownie Layer
- 1 1/4 cup keto-friendly chocolate we used Lily's dark chocolate baking chips
- 1/2 cup grass-fed butter
- 1 cup granular erythritol
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup almond flour
- 1/2 teaspoon salt
- 1/2 cup keto-friendly chocolate chips we used Lily's
For the Peppermint White Chocolate Layer
- 4 oz. pure cacao butter
- 1 cup confectioner erythritol
- 1 1/2 teaspoons peppermint extract
- 1/2 teaspoon vanilla extract
- pinch of salt
- 2 tablespoons heavy cream
For the Chocolate Ganache Layer
- 2/3 cup keto-friendly chocolate we used Lily's dark chocolate baking chips
- 1/4 cup heavy cream
- For the Peppermint Candy Topping
- 1/4 cup crushed sugar-free round peppermint candies
Instructions
For the Brownie Layer
- Heat your oven to 350°F.
- In a microwave safe bowl, melt the chocolate and butter in the microwave for 30 second intervals until melted, stirring between each interval.
- Stir in the granular erythritol, eggs, and vanilla.
- Next, stir in the almond flour and salt.
- Fold in the chocolate chips.
- Pour the batter into a parchment lined 8"x 11" baking dish.
- Bake for about 25 minutes or until the center is set.
- Let cool for 15 minutes.
For the Peppermint White Chocolate Layer
- In a microwave safe bowl, melt the cocoa butter in the microwave for 30 second intervals until melted, stirring between each interval.
- Whisk in the confectioner erythritol.
- Next, stir in the peppermint extract, vanilla extract, salt, and heavy cream.
- Pour the white chocolate mixture over the cooled brownie layer.
For the Chocolate Ganache Layer
- In a microwave safe bowl, melt the dark chocolate in the microwave at 30 second intervals until melted.
- Stir in the heavy cream.
- Dollop the ganache over the White Chocolate Peppermint Layer.
- Use a toothpick to create swirls.
For the Peppermint Candy Topping
- Unwrap the peppermints and place in a plastic Ziploc bag. Allow the air to escape and seal it shut.
- Use a hammer or heavy object to lightly break the candies into pieces.
- Sprinkle onto the still-wet chocolate swirls.
- Allow the White Chocolate Layer and Chocolate Ganache Layer to harden and set before serving.
Notes
- Bake the brownies in a fully pre-heated oven so that they cook through evenly.
- Let the brownies cool before adding the white chocolate so that it doesn't become thin and run off.
- Place the brownies in the fridge to allow the chocolate to set before serving.
