Keto Smoked Salmon Salad with Lemon Dill Vinaigrette
Ingredients
For the Salad
- 6 cups baby spinach
- 6 ounces smoked salmon torn or cut into strips
- 1/2 cucumber sliced
- 3 radishes sliced
- 1 scallion thinly sliced
- 1 avocado sliced
- 3 soft-cooked eggs halved
For the Lemon Dill Vinaigrette
- 2 tablespoons lemon juice
- 2 tablespoons fresh dill chopped
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons heavy cream
- sprinkle of salt and pepper
Instructions
For the Salad
- Assemble all the ingredients in a large bowl. Drizzle on desired amount of dressing.
For the Lemon Dill Vinaigrette
- Whisk the lemon juice and dill together in a small bowl.
- While whisking vigorously, slowly pour in extra-virgin olive oil. Then slowly whisk in the heavy cream.
- Sprinkle in salt and pepper to taste.
