Ingredients

For the Salad

  • 6 cups baby spinach
  • 6 ounces smoked salmon torn or cut into strips
  • 1/2 cucumber sliced
  • 3 radishes sliced
  • 1 scallion thinly sliced
  • 1 avocado sliced
  • 3 soft-cooked eggs halved

For the Lemon Dill Vinaigrette

  • 2 tablespoons lemon juice
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons heavy cream
  • sprinkle of salt and pepper

Instructions

For the Salad

  • Assemble all the ingredients in a large bowl. Drizzle on desired amount of dressing.

For the Lemon Dill Vinaigrette

  • Whisk the lemon juice and dill together in a small bowl.
  • While whisking vigorously, slowly pour in extra-virgin olive oil. Then slowly whisk in the heavy cream.
  • Sprinkle in salt and pepper to taste.
