Ingredients

For the Meatballs

  • 1 lb. ground chicken
  • 1 egg
  • 1/2 onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup almond flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon Sriracha
  • 2 teaspoons cumin

For the Butter Chicken Sauce

  • 1 tablespoon olive oil
  • 1/2 onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon garam masala
  • 1 1/2 teaspoon curry powder
  • 1/2 teaspoon cayenne pepper add more depending on your heat preference
  • 1/2 teaspoon salt
  • 1/2 teaspoon turmeric
  • 14 oz coconut milk 14 oz can
  • 2 tablespoons tomato paste
  • 2 tablespoons chopped cilantro

Instructions

For the Meatballs

  • Heat your oven to 375°F and line a baking sheet with parchment paper.
  • Combine all the ingredients together in a bowl.
  • Form the meat mixture into 1-inch round balls and place them in a single layer on the baking sheet.
  • Bake for about 15-20 minutes until the internal temperature reaches 165°F.
  • While the meatballs are baking, prepare sauce.

For the Butter Chicken Sauce

  • In medium saucepan, heat the olive oil over medium heat.
  • Add the onions and garlic and cook for a few minutes until softened and fragrant.
  • Add in remaining ingredients, stir to combine, and cook for 10 minutes.
  • Transfer the baked meatballs to a skillet and then pour in the butter chicken sauce.
  • Let the meatballs heat through for another 5-10 minutes.
  • Garnish with chopped cilantro and serve with cauliflower rice.
