Ingredients

  • 2 cups heavy cream cold!
  • 2 cups almond milk cold!
  • 1/2 cup granular erythritol
  • 1/2 cup confectioner erythritol
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon salt
  • green food coloring desired amount of coloring, optional
  • 1 cup keto-friendly chocolate chips

Instructions

  • Mix all the ingredients into a bowl except for the chocolate chips.
  • Churn the ice cream according to your ice cream maker manufacturer's instructions.
  • Add the chocolate chips in about halfway through the churning time.
  • Garnish with additional chocolate chips.

Notes

You want the ice cream base to be as cold as possible, so we recommend making it ahead of time and storing it in the fridge for at least 1-2 hours before churning.
