Ingredients

For the Kabobs

  • 1 lb. andouille sausage
  • 1 lb. shrimp
  • 1 1/2 bell peppers
  • 1 medium onion
  • 1 teaspoon Cajun seasoning

For the Dressing

  • 1/4 cup mayo
  • 1/4 cup sour cream or plain yogurt (try Siggi's whole milk skyr)
  • 1 teaspoon Cajun seasoning
  • 6 cups mixed green lettuce or enough to fill 4 bowls

Instructions

For the Kabobs

  • Soak 12" wooden skewers in water for about 20 minutes.
  • Heat your grill pan or outdoor grill to medium.
  • Cut the sausage into 3/4 inch rounds.
  • Cut the peppers and onions into 1 inch pieces.
  • Season the shrimp with the seasoning.
  • Skewer the sausage, shrimp, peppers, and onions.
  • Grill for about 20 minutes rotating along the way.

For the Dressing

  • Mix the mayo, sour cream or yogurt, and seasoning in a bowl. Place onto the salad greens.
  • Divide the salad greens among 4 salad bowls.
  • Put three skewers on top of each bowl and drizzle with a little more dressing.
