For the Kabobs
- 1 lb. andouille sausage
- 1 lb. shrimp
- 1 1/2 bell peppers
- 1 medium onion
- 1 teaspoon Cajun seasoning
For the Dressing
- 1/4 cup mayo
- 1/4 cup sour cream or plain yogurt (try Siggi's whole milk skyr)
- 1 teaspoon Cajun seasoning
- 6 cups mixed green lettuce or enough to fill 4 bowls
For the Kabobs
Soak 12" wooden skewers in water for about 20 minutes.
Heat your grill pan or outdoor grill to medium.
Cut the sausage into 3/4 inch rounds.
Cut the peppers and onions into 1 inch pieces.
Season the shrimp with the seasoning.
Skewer the sausage, shrimp, peppers, and onions.
Grill for about 20 minutes rotating along the way.
For the Dressing
Mix the mayo, sour cream or yogurt, and seasoning in a bowl. Place onto the salad greens.
Divide the salad greens among 4 salad bowls.
Put three skewers on top of each bowl and drizzle with a little more dressing.
