Keto Chocolate Cake Pops

For Cake Balls
- 2 cups almond flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon xanthan gum
- 1/2 teaspoon salt
- 1/2 cup cocoa powder
- 2 teaspoons coffee
- 3 eggs plus 1 egg white
- 1/2 cup coconut oil melted
- 1/2 cup almond milk
- 3/4 cup keto granular sweetener we used erythritol
- 1 teaspoon vanilla extract
- 50 cake pop sticks
For the Frosting
- 4 tablespoons softened butter
- 4 oz. softened cream cheese
- 1 teaspoon vanilla extract
- 1 1/2 cup keto sweetener confectioner is preferred, but granular is still okay
For the Chocolate Coating
- 10 oz. keto chocolate chips or chocolate bar
- 1 tablespoon coconut oil
For the Cake
Heat your oven to 350°F.
Mix all the ingredients in a large bowl.
Pour the batter into a 9 x 13-inch parchment paper-lined casserole dish.
Bake for about 25 minutes or until the center is cooked through.
Let cool for 5 minutes and then use a fork to break up the cake into crumbles.
For the Frosting
Combine all the ingredients into a bowl.
Next, mix your cake crumbles (from above) together with your frosting.
Roll the mixture into 1.25” balls and place them in a single layer on a parchment paper-lined baking sheet.
For the Chocolate Coating
Melt chocolate and oil using a double boiler or in the microwave.
Dip the tip of the cake pop stick in the melted chocolate, then stick it in the ball.
Roll the ball around in the melted chocolate at an angle until coated.
Let the excess chocolate drip off and place the cake pop back on baking sheet.
Repeat with remaining balls.
Garnish your cake pops with red and blue bows (optional).
