Keto Pancakes with Blackberry Syrup

For the Pancakes
- 5 eggs
- 4 oz. cream cheese
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 1/4 cups almond flour
- 2 tablespoons water
For the Blackberry Syrup (optional)
- 1 cup blackberries
- 1/2 cup sugar-free syrup
For the Pancakes
Heat a large skillet over low-medium heat and grease with butter or avocado oil spray.
Blend all the ingredients in a blender or whisk all the ingredients vigorously in a bowl until well combined.
Pour the batter in 1/4 cup portion sizes into the skillet making sure to not let the circles that form touch.
Let the batter cook for 1-2 minutes and when bubbles start to form on the top and the bottom starts to turn golden brown, flip the pancakes and cook on the other side until golden brown another 1-2 minutes.
For the Blackberry Syrup (optional)
Combine the blackberries and sugar-free syrup in a small saucepan and mash the blackberries with a spoon or fork.
Cook on medium heat until the mixture starts to bubble, then reduce the heat and cook for 3-5 more minutes.
Allow to cool slightly before serving.
