Keto Pancakes
Sorry coffee, but we think the best thing about waking up is a plate of keto pancakes!
Smother these fluffy mouthfuls of joy with sweet blackberry syrup and you have perfection on a plate.
They are pure bliss. Plus, you won't be able to tell that they are low-carb.
How to Make Keto Pancakes
There really isn't anything different about these pancakes.
If you can make regular pancakes, then you can make these.
All you need are 6 ingredients:
- Eggs
- Cream Cheese
- Baking Powder
- Salt
- Almond Flour
Use Almond Flour, Not Almond Meal
Before you buy it, make sure you are getting almond flour.
It is ground up much finer than the almond meal. If you accidentally use almond meal, it will have a grainy texture.
Almond meal is much better for pancakes than almond meal.
How to Make Keto-Friendly Syrup
As good as these pancakes are, what really sets them apart and makes them taste amazing is the sugar-free blackberry syrup.
Believe us, you've never tasted anything like it. Save this recipe, you can use the syrup as toppings for other keto-friendly baked treats too.
There are just two ingredients in our syrup - fresh blackberries and sugar-free syrup.
Lakanto syrup is our favorite. It has monk fruit sweetener in it, making it sugar-free. It has a light taste, which lets the blackberry flavor stand out.
Can you use other fruits? Yes, you can replace the blackberries with other fruit. Raspberries and strawberries have similar amounts of carbs and taste amazing on top of pancakes.
If you use a different fruit, don't forget to track your macros. All fruit has a different amount of sugar and carbs in them.
How Many Carbs Are In Keto Pancakes?
Each pancake only has 3.5 grams of net carbs.
That's not bad at all!
Add the blackberry syrup adds another 1.1 grams of net carbs per serving.
Can You Freeze Keto Pancakes?
Yes, these keto pancakes freeze really well. Make a huge batch of them all at once and freeze them. Now you have pancakes that you can warm up in the microwave on busy days.
Freezing Tip: Place a piece of parchment paper in between each pancake before you freeze a stack of them. This will prevent them from freezing into one giant lump.
They will stay fresh in the freezer for up to 3 months. Don't forget to label the freezer bag with the date.
Keto-Friendly Sweeteners
The pancakes themselves don't have any sweeteners of any kind. We found that the cream cheese was sweet enough on its own.
However, you can experiment with your pancakes and add a teaspoon of granular erythritol or monk fruit sweetener to the batter if you want to sweeter.
