- 2 cups pecans ground up in a food processor
- 1 cup almond flour
- 1/2 cup softened butter
- 1/2 cup coconut oil
- 1 teaspoon granular erythritol
- 1 teaspoon almond extract
- 1/2 teaspoon salt
- 1/2 cup confectioner erythritol
Mix the ground pecans, almond flour, butter, coconut oil, granular erythritol, almond extract, and salt in bowl.
Chill the mixture in the refrigerator or freezer for 20 minutes.
Roll into one inch balls and chill again for another 20 minutes.
Roll in confectioner erythritol.
Store in the refrigerator, as they need to be kept cold.
- Use a food processor to grind up the pecans.
- Combine the mixture together really well so that there is no dry flour left in the bowl.
- Make sure that you chill them before and after rolling the balls in confectioner erythritol.
