Keto Pecan Pie Fat Bombs

These Keto Pecan Pie Fat Bombs are loaded with healthy fats and are completely satisfying. They are so good, they may be mistaken for a cookie.  These fat bombs are keto, low-carb, grain-free, and gluten-free!

Ingredients

  • 2 cups pecans ground up in a food processor
  • 1 cup almond flour
  • 1/2 cup softened butter
  • 1/2 cup coconut oil
  • 1 teaspoon granular erythritol
  • 1 teaspoon almond extract
  • 1/2 teaspoon salt
  • 1/2 cup confectioner erythritol

Instructions

  • Mix the ground pecans, almond flour, butter, coconut oil, granular erythritol, almond extract, and salt in bowl.
  • Chill the mixture in the refrigerator or freezer for 20 minutes.
  • Roll into one inch balls and chill again for another 20 minutes.
  • Roll in confectioner erythritol.
  • Store in the refrigerator, as they need to be kept cold.

Notes

  • Use a food processor to grind up the pecans.
  • Combine the mixture together really well so that there is no dry flour left in the bowl.
  • Make sure that you chill them before and after rolling the balls in confectioner erythritol.
