What Equipment You Need
For this recipe, you need the obvious - ground beef, bacon, onions, mushrooms, and swiss cheese.
You also need a few kitchen items:
- Mixing bowls
- Measuring cups
- Half baking sheet
- Parchment paper
- Sharp knife
- Cutting board
- Skillets
- Grill pan (or outdoor grill)
That's it! Let's get cooking!
Step #1. Make the Cloud Buns
Heat your oven to 300°F and start on the cloud bun batter.
Separate the eggs and then mix yolks, cream cheese, Parmesan cheese, and rosemary together in mixing bowl.
Whip the separated egg whites and cream of tartar in separate bowl until you get medium stiff peaks.
Gently fold the yolk mixture into the white mixture. The batter should look like the picture below.
Next, line a baking sheet with parchment paper.
Scoop out the dough and use your hands to shape the dough into bun halves, then place on the lined baking sheet.
You should have enough dough for 10 bun-sized circles on the sheet.
Bake for about 30 minutes or until a light golden brown. Remove from the oven and set aside.
Step #2. Make The Caramelized Onions
Thinly slice the onion root to tip.
Cut them in half through the root end and remove the peels from the onions.
Place the onions cut side down on the cutting board and cut them into 1/4-inch width slices.
Heat a skillet over medium-low heat.
Add in the oil and onions. Cook until light brown and soft, stirring along the way.
Add a pinch of salt to the onions when they have cooked for about 15 minutes. It usually takes about 25 minutes for them to caramelize.
Step #3. Make Your Sauteed Mushrooms
Wipe your mushrooms clean with a damp cloth to remove any dirt.
Cut your button mushrooms in slices (or you can buy them pre-sliced).
Heat another skillet over medium heat.
Add the mushrooms, butter, and stock to the skillet and cook for about 20-25 minutes.
Step #4. Gather the Rest of Your Toppings
Get the rest of your ingredients ready.
Cook your bacon (we like to do this in the oven at 425°F for 15 minutes or so) and grab your Swiss Cheese slices.
Step #5. Grill Your Burger
Grill your burger patties on an outdoor grill or use a grill pan.
Add on the Swiss Cheese slice after the first flip.
Once ready, assemble your burgers by a starting with a bun half, then adding the cooked burger patty, then the bacon, then the mushrooms, then the caramelized onions, and finally another bun half!
Add some spicy mustard for some kick! Enjoy!!!!

Keto Bacon Mushroom Swiss Burger with Caramelized Onions on Herbed Cloud Bun
Ingredients
For the Rosemary Parmesan Cloud Buns
- 3 eggs
- 3 tablespoons softened cream cheese
- 1/4 teaspoon cream of tartar
- 1/4 cup Parmesan or pecorino romano
- 1 teaspoon fresh rosemary chopped
For the Caramelized Onions
- 2 yellow onions thinly sliced
- 1 tablespoon avocado oil
- pinch salt
For the Brown Butter Mushrooms
- 2 cups button mushrooms sliced
- 1/4 cup beef bone broth
- 2 tablespoons grass-fed butter
For the Burgers
- 2 lbs. ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Steak Seasoning
- 1 teaspoon All Purpose Seasoning
- 1/4 teaspoon black pepper
- 5 slices Swiss cheese
To Assemble
- 5 slices of cooked bacon
- Spicy brown mustard
Instructions
For the Rosemary Parmesan Cloud Buns
- Heat your oven to 300°F and line a baking sheet with parchment paper.
- Separate the eggs yolks from the egg whites.
- Mix the egg yolks, cream cheese, Parmesan cheese, and rosemary together in small bowl.
- In a separate bowl, whip the egg whites and cream of tartar until you get medium-stiff peaks.
- Gently fold the yolk mixture into the egg white mixture.
- Create 10 bun-sized circles on the baking sheet.
- Bake for about 30 minutes or until light golden brown.
- For the Caramelized Onions
- Heat a skillet to medium-low heat.
- Add in the oil and onions slices.
- Cook the onions low and slow, until they turn light brown and soft, stirring along the way.
- Add a pinch of salt to the onions when they have cooked for about 15 minutes. It usually takes about 25 minutes for them to caramelize.
For the Brown Butter Mushrooms
- Heat another skillet to medium heat.
- Add all in all the ingredients.
- Cook the mushrooms for about 20-25 minutes, stirring along the way.
For the Burgers
- Heat to grill or grill pan to high heat.
- Mix all the ingredients (except the swiss cheese slices) together in a medium bowl.
- Form the ground beef mixture into 5 patties.
- Grill the patties for on each side. (3 minutes on each side for medium rare, 4 minutes on each side for medium, and 5 minutes on each side for medium well)
- Add the swiss cheese after first flip.
- Once ready, assemble your burgers. Place one patty on the bottom cloud bun, then top with the onions, mushrooms, mustard, bacon, then the top cloud bun.
