Keto Buffalo Chicken Thighs
Ingredients
For the Chicken Thighs
- 10 chicken thighs patted dry
- 1 tablespoon baking powder
- 1 tablespoon salt
- 1 tablespoon paprika
- 1/4 teaspoon pepper
- 1/2 cup Buffalo Sauce recipe below
For the Buffalo Sauce
- 2/3 cup hot pepper sauce we use Frank’s Red Hot
- 1 stick butter grass-fed
- 1 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
Instructions
For the Chicken Thighs
- Heat oven to 375°F .
- In a small bowl, mix the baking powder, salt, pepper, and paprika.
- Sprinkle the seasoning mix on all sides of the chicken.
- Place the seasoned chicken thighs on a baking sheet and bake for about 35-40 minutes or until internal temperature reaches 165°F.
- Next, turn the oven to broil. Broil the thighs for another 3-5 minutes or until skin is browned and crisped.
For the Buffalo Sauce
- Heat all ingredients together in a saucepan and whisk together until combined.
- Brush the buffalo sauce on top of baked chicken thighs and garnish with a little blue cheese (optional).

My wife loves buffalo zingers. She does not like chicken on the bone as much as boneless thighs. They were great! We also tried them on a lettuce salad w/blue cheese. Yummy. The only thing they are missing is sour cream (added on top as eaten. You get the hot a d the cold. Delicious recipe!
