Keto Deviled Eggs are the perfect appetizer! We have given these eggs a creepy (and delicious) take with fresh lump crab and fried shallots. These are keto, low-carb, paleo, grain-free, and gluten-free!

Deviled eggs are so easy to make and such a crowdpleaser!!

All you need to do is hard boil the eggs, peel them, cut them in half, and fill them!!

Traditional deviled eggs are filled with a mixture made from the egg yolks of the hard-boiled eggs combined with other ingredients such as mayo and mustard.

We have taken the classic deviled egg and made it much more festive for Halloween!!

By creating major Halloween vibes courtesy of the spidery fried shallots that seem to be crawling their way out of the egg!

Not only are these spooky, bu they are also delicious!!

What Ingredients You Need

We love making deviled eggs for a party appetizer because they only require just a few ingredients. This recipe makes 12 dozen deviled eggs, but you can easily double or triple this recipe to serve a large group.

The Basics:

  • Shallots
  • Lump crab meat (opt for good quality)

In terms of kitchen equipment, all you need is a large pot, mixing bowl, knife, and spoon.

How To Boil The Perfect Egg

Boiling eggs is pretty straightforward. For deviled eggs, you want to make sure the yolks are completely cooked.

Here is our technique for boiling eggs:

  1. Add the eggs to a pot.  Fill a large pot with water about 1/4 of the way and place on a burner on your stovetop. Carefully, place the eggs in a single layer at the bottom of the pot. Next, add more water to the pot so that the eggs are covered by at least 2 inches of water.
  2. Boil the water. Add 1/2 teaspoon of salt to the water to help prevent the shells from cracking. Then turn the heat on to medium-high and bring the water to a full rolling boil.
  3. Turn off the heat. Once the water is boiling, turn the burner off, but don't move the pot. Keep it on the same burner. Let it sit for 16 minutes.
  4. Drain the eggs. While the eggs are sitting, fill a large bowl with ice water. We you reach 16 minutes of sitting time, use a slotted spoon to transfer the eggs to the ice water.

Egg Peeling Tips

Tips for getting the egg shell to come off easily:

  • Use older eggs
  • Add salt to the boiling water
  • Submerge the eggs in ice water for 5 minutes after cooking
  • Peel the eggs under running water

The base of the deviled egg filling is primarily made with the cooked yolks of the hard-boild eggs.

So first, cut your peeled eggs in half lengthwise.

Then gently remove the cooked yolks with a spoon and place them in a bowl.

Add the mayo, vinegar, mustard, and salt to the bowl.

Smash together the mixture with a fork or beat with an electric hand mixer until smooth.

Use a Piping Bag to Add the Filling

If you want the deviled eggs to have a uniform look to them, use a piping bag.

Don't have a piping bag? Make your own! Put the filling in a zippered plastic bag and cut a hole in the corner.

Now you are ready to squeeze the filling evenly into the egg halves.

Get That Spider Leg Look

Fried shallots are like mini onion rings! They are crunchy, sweet, and altogether delicious!

They also very simple to make. All you need is some oil and a skillet.

In a small skillet, heat some avocado oil over medium heat. Thinly slice the shallot and add the shallot slices to the hot oil.

Fry for one minute, then reduce the heat to medium-low.

Cook for 15 minutes or until the shallots are crisped – they will crisp up even more as they dry and cool.

Transfer the shallots with a slotted spoon to a plate lined with paper towels.

Assemble The Keto Deviled Eggs

Use a piping bag (or Ziploc bag with one cut corner) to fill each egg white half with the yolk mixture.

Next, gently place a small spoonful of lump crab on top of the egg filling and sprinkle with our homemade old bay seasoning.

Last but not least, carefully top the deviled eggs with the fried shallots and sprinkle on more seasoning.

Voila! You have a the perfect Halloween inspired appetizer in less than 30 minutes!
